Plant-based Meal Idea: Pinquito Beans, Tofu Scramble, Brown Rice, Sautéed Spinach



This meal is one of my favorites! It's a plant-based, vegan meal of pinquito beans, brown rice, tofu scramble, and sauteed spinach - about 1/2c each - is high protein and a delicious example of a meal that's both healthy for you and the planet and has about 20g protein, 12g fiber, 3g fat, and zero cholesterol.


The carbon and water footprint is small relative to if animal-based foods were included.



Tofu, rice, and beans have emissions equivalent to wind and solar. They require way less water and land to grow. Animals get to live and you are no longer contributing to the factory farm system which includes no more animal waste polluting our water, air, and land.


Most importantly, this meal is delicious and simple to make!


You can use any kind of beans you like. Pinquito beans are one of my favorites because when slow cooked with onion, garlic, and Bay leaves the beans produce this rich beef-like flavor.


Here is my recipe for my favorite Filipino-style tofu scramble.


You can also use other greens besides spinach like chard, kale, or collard greens. I simply saute some chopped onion with a little oil until softened, and then toss in the greens and season with a little salt, pepper, garlic powder, and a squeeze of lemon or lime for a nice hint of zest.


The brown rice in my meal is a combo of brown rice, red rice, and quinoa. I like to mix up the grains to get a cool mix of color, texture, and protein.
